The state of Jalisco, in western Mexico, has been witness to the development of the tequila industry, which started more than two centuries ago and has earned world fame for Mexico. When the Spanish came to Jalisco, then called New Galicia, they adapted the native peoples’ Agave beverages by introducing distillation. This was the beginning of what is now Mexico’s national drink. Tequila first traveled beyond Mexico’s border into international markets in the 20th century.
In spite of the enormous variety of Agaves found throughout the country, true tequila is produced from the blue Agave plant only and is strictly regulated by the Tequila Regulatory Council (CRT) of Mexico. Only certain regions in Mexico have the necessary geographic characteristics for cultivating the blue Agave and, hence, producing tequila. The requirements for producing Mexico’s national spirit have been defined since 1974, by the “Tequila” Denomination of Origin. The blue Agave is known for its longevity, taking eight to ten years to reach full maturity.

Blanco, also called silver or plata, is tequila as it comes from the still. Aged no longer than 60 days in metal tanks, Blancos embody the natural flavours of blue Agave plants as harvested in Mexican soil. Blanco tequilars are marked by flavours of pepper, spice, cinnamon and herbs. Recommend for mixed drinks. - Sauza White

Reposado, meaning "rested," refers to the tequila that is aged anywhere from two months to one year in oak. This is a great choice for those who fear the tequila bite. Aging the tequila mellows some of the Agave flavours and the sweet oak imparts a smooth finish. Recommended for shots or shooting. - Olmeca Gold

Aneja is aged at least one to ten years. Anejos exhibit strong characteristics of oak aging such as vanilla, cedar, spice, butterscotch and caramel. These are great after-dinner drinks comparable to fine whiskies, single malt scotches or cognacs. Recommended for sipping. - Carralejo Anejo
